How to Make Cheesy Baked Potatoes
First, preheat your oven to 400°F (205°C) and grease a 9x13 inch baking dish with a bit of butter. In a saucepan over medium heat, melt the butter, then stir in the flour for about a minute. Gradually add the milk and vegetable broth, whisking continuously until the mixture thickens.
Once your sauce is ready, stir in the garlic, thyme, salt, and pepper. Cook for an additional 2-3 minutes until the sauce lightly coats the back of a spoon. Continue layering the remaining potatoes, onions, sauce, and cheese just like the first layer. Cover the dish with aluminum foil and bake for 30 minutes. After that, remove the foil and bake for another 35-40 minutes until the potatoes are tender and the cheese is golden brown.
