Ingredients You’ll Need
First, let’s talk about the essential ingredients for this green curry. I opted for free-range chicken, which has a delicious and firm texture that enhances the overall flavor of the dish.
- 1 free-range chicken (about 1.4 kg)
- 2-3 cups of coconut milk
- 6-10 Thai eggplants
- 6-10 sprigs of Thai basil
- 2 red chili peppers
- 20 kaffir lime leaves
- 1/2 teaspoon of salt
The green curry spice mix includes:
- 150 grams of Thai green chilies
- 1 bulb of garlic
- 3 shallots
- 1 piece of galangal
- 5 cilantro roots
- 1 kaffir lime (zest only)
- 2 stalks of lemongrass
- 1 tablespoon of white pepper
- 1 tablespoon of coriander seeds
- 1 tablespoon of fennel seeds
- 1 teaspoon of salt
- 1 tablespoon of shrimp paste
Grinding the Spices
The most crucial step is grinding the spices into a fine paste. I spent about an hour and a half on this process, and I promise the effort is absolutely worth it.
Don’t forget to add the shrimp paste at the end of the grinding for that extra depth of flavor. If you're short on time, you can use a blender, but it won’t achieve the same authentic texture as hand-grinding.

Preparing the Chicken
Cut the chicken into smaller pieces to allow the flavors to penetrate more quickly. You can chop the chicken however you like, as long as it suits your family’s taste. It’s best to parboil the chicken in water before cooking it with the curry to ensure it stays tender.
Cooking the Green Curry
Once you have all your ingredients ready, cooking the curry becomes a breeze. Start by pouring about 2 cups of water into a pot, then add all the spices and chicken. Toss in the kaffir lime leaves to infuse that signature aroma.
Simmer on low heat for a few minutes until the chicken is tender, then stir in the coconut milk. At this point, the delightful aroma of the curry will fill your kitchen, tantalizing your taste buds.
